Good Friday fish with cheese

The Wisconsin Milk Marketing Board has some interesting recipes for enjoying cheese with your fish during Lent.

Ruby Trout Fillets With A Savory Crust Of Horseradish, Garlic And Wisconsin Cheese

Servings: 4

Ingredients:

4 Ruby Trout fillets (8 ounces each)
Salt and ground black pepper
1 tablespoon minced onion or shallot
4 teaspoons prepared horseradish
1 head roasted garlic or 1 teaspoon minced garlic
4 egg whites
1 cup (4 ounces) Wisconsin Rofumo (Smoked Fontina or Smoked Gouda cheese can be
substituted)
3/4 cup plain dry bread crumbs

Cooking Directions:

Place trout fillets skin-side down on an oiled baking sheet. Season with salt and pepper.

Mix onion, horseradish and garlic; reserve.

In mixing bowl, whip egg whites until stiff. Fold in reserved horseradish mixture, cheese and bread crumbs. Mixture will have the consistency of a fine paste. Spread mixture evenly over trout fillets, approximately 1/3 cup per fillet. Bake at 375° F for 8 minutes. Finish fish under broiler until golden brown on top. Serve with rice and roasted squash.
